Cook Instructions
Boiling (easiest)
Fill a large pot with heavily salted water. Rolling boil. Add lobsters head-first, cover. 12 min for 1.25 lb, 14 min for 1.5 lb, 18 min for 2 lb.
Steaming
2 inches salted water in pot. Bring to boil. Add lobsters on a rack, cover. Add 2 minutes to the boiling times above. Shells turn bright red when done.
Storage
Cook within 24 hours. Keep in refrigerator covered with damp newspaper or cloth. Never in water. Never sealed airtight. Never on ice.
